Kabobs: Chipotle Monterey Jack Cheese Chicken Sausages & Lime

Any brand of chicken sausages will work

Ingredients

  • 12 oz. pkg. Johnsonville Chipotle Monterey Jack Cheese Chicken Sausages, cut into 1-inch pieces
  • 1 medium red bell pepper, cut into 1 to 1-1/2 inch pieces
  • 1 medium green bell pepper, cut into 1 to 1-1/2 inch pieces
  • 1 small onion, cut into wedges or squares
  • 1 c yellow or cherry tomatoes
  • 1/2 c. honey
  • 1/2 c. lime juice
  • 1/4 c. low-sodium soy sauce

Instructions

In a bowl, combine the honey, lime juice and soy sauce. Set aside 1/3 cup.

In a 1 gallon zip lock resealable bag, combine the peppers, onions, tomatoes and remainder of the honey-lime mixture. Seal bag and refrigerate for 30 minutes to an hour.

On metal or soaked wooden skewers, alternately thread sausage pieces and vegetables. 5 pieces of sausages to a skewer will make 6 skewers.

Preheat grill to medium. Grill for 10-15 minutes or until browned, turning frequently and basting with remaining marinade.
