Cilantro-Lime Rice

Great side dish with Mexican entrees.
Nice change from Spanish rice.

Ingredients

  • 1 Tbls. butter
  • 1 small onion, chopped fine
  • 2 cloves garlic, minced
  • 1 c. basmatti, long grain white or brown rice
  • 2 c. chicken broth
  • 2-3 Tbls. fresh lime juice
  • zest from one large lime
  • 2-3 Tbls. fresh chopped cilantro
  • salt and pepper to taste

Instructions

Melt butter in a medium size sauce pan. Add onion and saute on low heat until tender (3-5 minutes); stir in the garlic and remove pan from burner.

Add chicken broth and rice. Return pan to burner and bring to a boil over high heat. Reduce heat to low, cover and simmer until rice is tender (according to package directions).

Remove pan from heat, add the lime juice, lime zest, cilantro, salt and pepper to taste; fluff with a fork and serve.
