Zucchini: Zucchini & Yellow Squash (Oven Roasted)

Made for our 37th wedding anniversary dinner
Ingredients
- 1 to 2 small zucchini, sliced 1/4-inch thick, cut in half
- 1 to 2 small yellow squash, sliced 1/4-inch thick, cut in half or quartered
Seasoning
- olive oil
- steak seasoning
- seasoning salt
- coarse black pepper
- oregano
Instructions
In a large bowl, toss the zucchini and squash in olive oil.
Sprinkle with steak seasoning, seasoning salt, coarse black pepper and oregano.
Spread the squash and zucchini on a foil-lined cookie sheet in an even layer.
Roast at 400 degrees for 20 minutes for perfectly tender baked squash and zucchini.
NOTE: You can also saute in a pan for about 10 minutes until tender crisp.
