Zucchini Chocolate Chocolate-Chip Muffins

Great way to use zucchini and who doesn't love chocolate?
Very moist.

Ingredients

  • 2 eggs
  • 1/2 c. canola oil (or 1/4 c. unsweetened applesauce & 1/4 c. canola oil)
  • 1/2 c. white sugar
  • 1/2 c. brown sugar
  • 2 tsp. vanilla
  • 1-1/2 c. grated zucchini
  • 1-1/2 c. unbleached all-purpose white flour
  • 1/2 c. cocoa
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. mini or regular size dark chocolate chips

Instructions

Combine eggs, oil (applesauce if using), sugars and vanilla in a bowl; using an electric mixer on low, mix until blended. Add grated zucchini mix just until blended.

Add flour, cocoa, baking soda, baking powder and salt. Mix on low just until dry ingredients are blended into wet ingredients. Fold in in chocolate chips.

Spoon batter into greased or paper lined muffin cups.

Bake at 350 degrees for 20-25 minutes. Remove muffins from pan and cool on a wire rack.
