5 medium Yukon gold potatoes, cut into wedges
1-2 Tbls. olive oil
1/4 c. dry bread crumbs
1-1/2 t. paprika
3/4 t. salt
1/4 t. each of oregano, thyme and cumin
1/8 t. each of cayenne and black pepper
In a large bowl, toss potatoes with oil.
Combine the remaining ingredients; sprinkle over potatoes and toss to coat.
Arrange potatoes in a single layer in a 15 x 10 x 1 inch baking pan coated with nonstick cooking spray.
Bake uncovered at 425 degrees for 40-45 minutes or until tender.
