Yogurt-Marinated Chicken

Great with Mexican or Southwestern side dishes

Ingredients

  • 6 skinless chicken breast halves (6 oz. each)
  • 1/2 c. low fat plain yogurt
  • 3 garlic cloves, minced
  • 2 Tbls. lemon juice
  • 1 Tbls. canola oil
  • 1 t. sugar
  • 1 t. chili powder
  • 3/4 t. ground ginger or 1 Tbls. minced fresh ginger
  • 1/2 t. salt
  • 1/2 t. cumin

Instructions

In a large Zip lock bag, combine all marinate ingredients; add chicken. Seal bag and turn to coat; refrigerate for at least 8 hours or overnight.

Coat grill rack with nonstick cooking spray before starting the grill for indirect heat. Drain and discard marinade.

Grill chicken, covered over medium heat for 15 minutes. Turn; grill 15-25 minutes longer or until juices run clear.
