White Chocolate Macadamia Muffins

Ingredients

  • 1/4 c. butter (no substitutes), melted
  • 3/4 c. white sugar
  • 1 egg
  • 1/2 c. milk
  • 1-3/4 c. all-purpose unbleached white flour
  • 2-1/2 t. baking powder
  • 1/2 t. salt
  • 3/4 c. chopped macadamia nuts
  • 3/4 c. vanilla or white chocolate chips

Glaze

  • 1/2 c. vanilla or white chocolate chips and 2 Tbls. heavy whipping cream

Instructions

In a bowl, combine the melted butter and sugar; mix well and add egg and milk.

Stir in dry ingredients and fold in nuts and chips.

Fill paper-lined muffin cups two-thirds full.

Bake at 400 degrees for about 15 minutes; until lightly browned a bit on top.

Cool for 5 minutes before removing from pan to wire rack.

Glaze: In a small microwave-safe bowl, melt chips and cream (about 30 seconds); stir until smooth. Drizzle over warm muffins.
