White Chocolate Cranberry Toffee

Perfect for the holidays! Be careful, they are addictive.
Ingredients
- saltine crackers (1-1/2 sleeves)
- 1 c. unsalted butter
- 1 c. firmly packed light brown sugar
- 14 oz. can sweetened condensed milk
- (2) 12 oz. pkg. (3 c.) white chocolate chips
- 3/4 c. chopped pecans
- 3/4 c. chopped sweetened dried cranberries
Instructions
Preheat oven to 400 degrees.
Line a large rimmed baking sheet, to hold 1-1/2 sleeves of saltine crackers, with foil; lightly spray with cooking spray.
Arrange saltines in an even layer on prepared pan.
In a medium saucepan, bring butter and brown sugar to a boil over medium-high heat; cook 2 minutes. Remove from heat. Stir in condensed milk. Pour mixture over crackers.
Bake 10 minutes until golden brown. Turn oven off.
Take pan out of oven and sprinkle with white chocolate. Place pan back in the oven with the door open. Let stand 1-2 minutes or longer to soften. When soft, remove pan from oven. Using a spreader knife, carefully spread softened chocolate evenly over baked crackers. Sprinkle with pecans and cranberries. Let cool completely.
Carefully lift foil, with bars on, out of the pan and place on a hard surface. Cut into cracker-size pieces (pizza cutter works great). Store in an airtight container up to 5 days.
