Whipped Iced Coffee

Ingredients
- 1 Tbls. instant coffee (you can use decaf, if desired)
- 1 Tbls. white sugar (I prefer to use 1-1/2 to 2 t. only)
- 1 Tbls. hot water
- 1 c. cold milk (any kind)
- Ice cubes (4-5 work best)

Place the instant coffee, sugar, and hot water into a medium mixing bowl. Using a hand mixer (with whisk attachment or beaters) on a low speed first to avoid splatters, then increase to medium speed. Beat the mixture for about 3 minutes, until it begins to turn a golden brown and becomes a thick and fluffy consistency (like Cool Whip). You can also do manually with a whisk, but will take a while longer to form. Whisk fast to get air into the mixture!

Pour the milk in a tall glass, add ice, flavor (if using) and scoop the whipped mixture on top using a spatula and enjoy.
The ratio for a single serving is 1:1:1. That is there are equal parts of instant coffee, sugar, and hot water. By simply doubling or tripling the recipe you’ll get either more fluff or make extra cups.
NOTE: For additional flavor, add a little Bailey’s Irish cream, Kahlua or flavored Kahlua, 1 Tbls. flavored coffee creamer (or as much as you want) or any other flavoring of your choice
