Wheat Thin Bites

Tastes just like a Butterfinger candy bar



Ingredients
- Wheat Thin “BIG” Crackers or regular size, whichever you prefer
- low-sugar creamy Jiff peanut butter
- chocolate almond bark, melted (5 squares) - I buy 24 oz. square pkg., Plymouth Pantry brand found at Wal-Mart (has less sugars in than regular chocolate and melts beautifully)
Instructions
Spread peanut butter between (2) Wheat Thin crackers to make little sandwiches.
Melt chocolate in a saucepan on very low heat, stirring frequently until melted. If heat is too hot, chocolate will scorch.
Using a tongs, dip crackers sandwiches in melted chocolate almond bark (use a spoon to help coat each cracker)
Place each chocolate coated cracker on a cookie sheet lined with wax paper to harden.
I store in refrigerator, but they don’t have to be.
Using 5 squares of melted chocolate yields:
Small crackers - est. 86 crackers = 43 snacks
Big crackers - est. 46 crackers = 23 snacks
NOTE: a 12 oz. pkg. of Ghirardelli chocolate melting wafers will also work instead of the almond bark
