Wheat Germ Pancakes
Healthy, moist and delicious!
Ingredients
- 1 c. whole wheat pastry flour
- 1 c. unbleached all-purpose flour
- 1 Tbls. white sugar
- 1 Tbls. baking powder
- 1-1/2 t. salt
- 1 Tbls. wheat germ
- 1 large egg
- 2 c. low-fat milk
- 1 t. vanilla extract
- 1/2 c. applesauce
- 4 Tbls. butter, melted and cooled slightly
Instructions
Combine flours, sugar, baking powder, salt and wheat germ in a large bowl. Whisk to combine.
In a separate bowl, whisk egg, milk, vanilla extract, applesauce, and melted butter.
Fold wet mixture into the flour mixture, stirring just until moist, do not over mix.
Heat a skillet or griddle over medium heat. Brush with a little canola oil.
When oil is hot, pour ΒΌ cup of batter onto a hot skillet or griddle.
Flip the pancakes when bubbles form on top. Cook until the second side is golden brown.
Remove from the skillet and serve with your favorite syrup.
