Waffles (Buttermilk)

Ingredients

  • ½ c. butter, melted and cooled
  • 2 c. unbleached all-purpose white flour
  • 1 Tbls. white sugar
  • 2 t. baking soda
  • 1 t. baking powder
  • ½ t. salt
  • 3 large eggs, separated
  • 2 c. low-fat buttermilk

Toppings

  • syrup
  • fruit toppings or fresh fruit
  • whipped cream, if desired

Instructions

Melt butter, set aside to cool.

In a large bowl, sift together flour, sugar, baking soda, baking powder and salt. Set aside.

Separate eggs, putting yolks in one bowl and whites in another.

Beat egg whites until rounded peaks form; set aside.

With clean beaters, beat egg yolks until lemon color. Gradually stir in cooled butter and buttermilk into egg yolks.

Pour wet ingredients into bowl with dry ingredients. Mix only until smooth. Gently fold in egg whites into batter.

Lightly grease waffle iron with a little canola oil and preheat. Adjust heat towards high.

Pour 1/2 cup batter into center, close lid and cook according to waffle maker’s instructions. DO NOT open lid while baking.

Gently lift waffle from waffle iron and serve with your favorite topping (syrup, fruit, whipped cream etc.)

As you cook the waffles, place them on a cooling rack to cool if keeping for future use. Wrap well and freeze up to 2 months. To reheat, toast in toaster on medium setting.
