Waffles

Ingredients
- 2 eggs
- ½ c. melted butter (or canola oil) – see tips below
- 1-3/4 c. milk
- ½ t. vanilla
- 2 c. unbleached all-purpose or whole wheat flour
- 1 Tbls. white sugar
- 4 t. baking powder
- ¼ t. salt
- syrup or fresh berries, if desired
Instructions
Heat waffle iron (waffle irons without a nonstick coating may need to be brushed with canola oil or sprayed with cooking spray before batter for each waffle is added).
In large bowl, using a wire whisk, beat eggs until fluffy. Beat in sugar, melted butter (or oil), milk, flour, baking powder and salt.
Pour about 1/2 cup batter onto center of hot waffle iron. (check manufacturer’s directions for recommended amount of batter.) Close lid of waffle iron and cook to desired doneness.
When done, carefully remove waffles. Repeat with remaining batter.
Serve immediately with syrup or fresh berries (or keep warm in oven; see tips below).
