Twice Baked Party Potatoes (stuffed)
Stuffed in the shell
Ingredients
- 6 large baking potatoes
- 3 t. canola oil, optional
- 3/4 c. sliced green onions
- 3/4 c. butter, divided
- 1/2 to 3/4 c. light cream or milk
- 1 c. low-fat sour cream
- 2 c. shredded cheddar cheese
- 1-1/2 t. salt
- 1 t. white pepper
- paprika
Instructions
Rub potatoes with oil if desired; pierce with a fork. Bake at 400 degrees for 1 hour and 20 minutes, or until tender. Allow potatoes to cool to the touch.
Cut potatoes in half lengthwise; carefully scoop out the inside; leaving a thin shell. Place the inside from potatoes in a large bowl.
Sauté onions in 1/4 c. butter until tender. Add to potatoes along with cream, sour cream, salt and pepper. Beat until smooth. Fold in cheese.
Stuff potato shells and place in 9 x 13" pans.
Melt remaining butter or margarine and drizzle over the potatoes. Sprinkle with paprika.
Bake at 350 degrees for 20-30 minutes or until heated through.
NOTE: Serves 12. You can make ahead of time and refrigerate until ready to bake.
