Tuna: Tuna Pasta Salad

Phase 3 - A healthier version
Nice change from traditional Tuna Salad

Ingredients

  • 8 oz. pasta of your choice
  • 12 oz. canned solid white premium tuna packed in water, drained
  • 4 celery stalks, chopped
  • 2/3 c. frozen peas, thawed
  • 2 Tbls. red onion, minced
  • 15 cherry tomatoes, quartered

Dressing

  • 1/2 c. low fat mayonnaise (Hellman's with olive oil)
  • 1/4 c. plain low fat yogurt
  • 1 Tbls. + 1 t. balsamic vinegar
  • salt & fresh ground pepper, to taste

Instructions

Cook pasta according to package directions, drain and rinse under cold water.

Whisk together mayonnaise, yogurt and balsamic vinegar in a small mixing bowl. Season with salt and pepper.

Place tuna in a large mixing bowl and break into small pieces. Add pasta, celery, tomatoes, peas and onion; stir to combine. Fold in dressing. Season with additional salt and pepper if desired.
