Tuna Patties with Lemon Garlic Aioli I

Easy to make, healthy and delicious.
Ingredients
- 2 (4 oz.) cans solid white albacore tuna in water, drained well
- ¼ c. finely chopped green pepper
- 1 t. onion powder
- 1 t. minced garlic
- ½ t. salt
- 1 egg, beaten
- 1 Tbls. low fat mayonnaise with olive oil
- ½ c. plain bread crumbs, divided (1/4 c. + 1/4 c.) *do not substitute panko
Lemon Garlic Aioli
- ½ c. Hellman’s mayonnaise with olive oil
- 1 t. minced fresh garlic
- 1 t. fresh lemon juice
- ¼ t. white sugar
- ½ t. salt
- few dashes of hot sauce, optional (Sriracha)
Instructions
Be sure to break up all chunks of tuna so you have small tiny piece or the patties won’t form well.
Drain tuna well; add to a medium size bowl along with green pepper, onion powder, garlic, salt, egg, mayonnaise and ¼ cup bread crumbs. Mix all together with a fork to break up the large chunks of tuna.
Take about ½ cup of the mixture and form it into a patty with your hands. Place the patty on a plate or small platter. Cover with saran wrap and refrigerate for a few hours to firm them up (helps to handle easier when coating with bread crumbs).
When ready to fry, sprinkle the remaining ¼ cup bread crumbs onto a plate. Carefully place each patty onto the bread crumbs individually and turn over to coat both sides. They will be fragile (if your patties break up, just keep them in your hand and sprinkle with crumbs instead of trying to flip them on the plate).
Heat oil in a fry pan over medium heat and cook the patties for about 4-5 minutes per side.
Tip: Use 2 thin spatulas to turn them so they don’t break. One to get under the patty and the other to slowly catch it as you turn it over.
AOLI: Add all ingredients to a small bowl and mix together. Can make ahead and refrigerator until ready to serve.
Makes 4 patties
