Tuna: Mexican Chopped Tuna Salad

An incredible tasting tuna salad with a creamy taco-flavored dressing.
Ingredients
- 2 (5 oz.) cans albacore tuna
- 1 red bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 small can sliced black olives, drained
- 1 can sweet yellow corn, drained (or 1 cup frozen, thawed)
- 2 roma tomatoes, deiced
- 2 ripe avocados, diced
- ¼ c. fresh cilantro, chopped
- 1 heart of romaine lettuce, chopped well
- salt and pepper to taste
- soft tortillas or Tostito chips, optional for serving
Creamy Taco-Flavored Dressing
- 2/3 c. low-fat plain Greek yogurt
- 1/3 c. light mayonnaise (with olive oil)
- 1 t. garlic powder
- ½ t. cumin
- ½ t. garlic salt
- 1 Tbls. low-sodium taco seasoning
Instructions
In a small bowl, stir all dressing ingredients together.
In a large bowl, combine tuna and all salad ingredients; adding chopped lettuce last.
Gradually pour dressing over salad, as you toss to combine, then gradually add more dressing until salad is coated to desired consistency. Add salt and coarse ground pepper to taste.
Serve as is, in a wrap or dip style with tortilla chips.
NOTE: Makes (12) 1 cup servings. Cut recipe in half to serve 6. Assemble the next day with remaining ingredients for another meal.
