Tropical Surprise Muffins

Ingredients
- ½ c. canola oil
- 2 eggs
- 1 c. crushed pineapple, drained (save juice)
- ¾ c. milk (pineapple juice + enough milk to equal ¾ cup
- 2-3/4 c. Master Mix
- ½ c. macadamia nuts, chopped
- ½ c. flaked coconut
Cream Cheese Topping (optional)
- 8 oz. pkg. low-fat cream cheese
- 1 t. vanilla
- ½ c. white sugar
- 1 egg
Instructions
Preheat oven to 400 degrees.
Cream Cheese Topping: Using an electric mixer, whip cream cheese, sugar and vanilla until smooth. Add egg and whip together until just combined. Set aside.
Drain pineapple and save juice. Pour juice into a 1 cup measuring cup and fill with milk until the ¾ c. line. Set aside.
In a large mixing bowl, mix canola oil, eggs, crushed pineapple and milk/pineapple juice until thoroughly combined.
Add Master Mix and stir until just combined.
Fold in macadamia nuts and coconut.
Spoon batter into greased or paper lined muffin cups. Top with cream cheese topping.
Turn oven temp down to 375 degrees and bake for 15-18 minutes or until toothpick inserted in the center comes out clean. Remove to wire rack to cool.
NOTE: Topping is optional. Picture doesn't have topping on (forgot to make it).
