Ingredients

  • 1 can hominy
  • 1 can white shoe peg corn
  • 1 can black beans or black-eyed peas
  • 3 green onions (use most of onion), chopped
  • 3 tomatoes, chopped
  • 1 (4 oz.) can green chilies
  • 1 bunch cilantro, chopped
  • 24 oz. Pace Picante sauce (medium)
  • 1/2 t. garlic powder
  • 8 oz. bottle zesty Italian dressing
  • tostito chips

Instructions

Rinse and drain hominy, corn and black beans (or black-eyed peas).

Combine all ingredients in a large bowl.

Serve with your favorite tostito chips.

NOTE: Hominy is “tex-mex” and found in the ethnic section or near the beans in grocery stores.

ou could also substitute black beans for the black-eyed peas.
