Taco Pies (Pie Iron)

Made camping Sept. 2022 at Peninsula State Park. Big hit!
I use my homemade recipe for Refried Beans
I also use my homemade Taco Seasoning

Ingredients

  • non-stick spray
  • round pie irons
  • 12 (5”) flour tortillas (use mini-street size for smaller pie irons)
  • ½ c. or more of refried beans
  • ¾ lb. pre-cooked taco-seasoned ground beef (or turkey)
  • onion, diced
  • jalapeno pepper, diced fined (optional)
  • shredded cheese (Mexican blend, cotija etc.)

Toppings

  • salsa
  • low-fat sour cream (Daisy)

Instructions

Place a tortilla on one side of an oiled pie iron and smear it with a thin layer of refried beans. Add 1/4 to 1/3 cup taco meat, a little onion, a little diced jalapeno if desired and plenty of cheese.

Set a second tortilla over the filling and close the iron; trim off the excess tortilla with a knife (feed the birds, if you like)

Cook on medium coals, turning often, until tortilla is browned, on both sides and filling is hot.

Repeat with remaining ingredients to make more tacos.

Plop them onto plates and add toppings of your choice.

NOTE: Makes 6

If your pie irons aren't big, use the mini street-size taco tortillas; won't need to trim.
