Sweet Potatoes: with Apples & Cranberries

A Thanksgiving Tradition

Ingredients

  • 4 medium sweet potatoes, pre-cooked and cut up
  • 1/2 - 1 c. whole cranberries (fresh or frozen)
  • 2 medium apples, peeled and sliced
  • 3 Tbls. butter
  • 1/3 c. packed brown sugar
  • 2 Tbls. maple syrup
  • 1/2 t. ground cinnamon

Instructions

Either bake (about 25-35 minutes), or peel and boil (about 20 minutes) sweet potatoes ahead of time. You don't want them totally cooked and soft because they will be baking another 30 minutes or so. Cool and refrigerate until read to assemble.

When ready to prepare dish, peel potatoes if they were baked, and cut into chunks.

Combine sweet potatoes chunks, cranberries, and sliced apples in a casserole or baking dish; set aside.

Melt butter; add brown sugar, maple syrup and cinnamon. Pour over sweet potatoes and fruit. Lightly toss to coat.

Bake at 350 degrees for 30-40 minutes. Stir a few times while baking to coat with juices.

NOTE: In a pinch you can also substitute canned sweet potatoes, just drain well.
