Sweet Potatoes: Grilled Wedges
Easy and quick side dish with Mexican or Southwestern food
Ingredients
- 4 medium sweet potatoes
- 2 Tbls. olive or canola oil
- 1/4 t. cayenne pepper
- 1/4 t. salt (or garlic salt)
- 1/4 t. black pepper
Instructions
Cut each unpeeled sweet potato lengthwise in half.
Place halves on a microwave-safe plate and cook in microwave oven on high 6 to 8 minutes or until fork-tender. Turn halfway through.
Mix oil, cayenne pepper, salt and pepper in a shallow bow l or pan; set aside.
Cut each sweet potato half into wedges and toss to coat in the oil mixture.
Place wedges directly on grill rack or grill pan. Grill on somewhat hot heat 6-7 minutes or until tender and lightly charred, turning over once.
