Sweet Potato Pancakes

Ingredients
- 1 egg
- 1-3/4 c. milk
- 1/2 c. canned sweet potatoes, drained and mashed
- 2 Tbls. melted butter
- 2 c. unbleached all-purpose white flour
- 2 Tbls. packed brown sugar
- 3 t. baking powder
- 1/2 t. salt
- 1/2 t. ground ginger
- 1/2 t. ground cinnamon
- 1/4 t. ground nutmeg
- 1/4 – 1/2 c. chopped pecans
- syrup
Instructions
In a small bowl, combine dry ingredients in the right column.
In another bowl, whisk the egg, milk, sweet potatoes and melted butter. Stir into dry ingredients just until moistened.
Pour batter by 1/4 cupful’s onto a greased hot griddle; turn when bubbles form on top. Cook until second side is golden brown. Serve with syrup.
