Sweet Potato Muffins II

Perfect in Fall.
Very moist.

Ingredients

  • ¾ c. canola oil (or 1/2 c. unsweetened applesauce with 1/4 c. oil)
  • 1 c. white sugar
  • 3 large eggs
  • 1 t. vanilla
  • 2 (15 oz.) canned sweet potatoes, mashed (see note below)
  • 2 c. unbleached white all-purpose flour
  • 1 t. baking soda
  • ¼ t. baking powder
  • ½ t. salt
  • 2 t. cinnamon
  • Raisins or walnuts, optional

Instructions

In a large bowl, combine flour, baking soda, baking powder, salt and cinnamon.

In a separate bowl, combine sugar, oil, eggs and vanilla with an electric hand mixer on low speed.

Add dry ingredients and continue to mix on low; add sweet potatoes and mix just until combined.

Fold in raisins or nuts, if desired.

Pour into greased muffin tins. Bake at 325 degrees for about 25-30 minutes.

NOTE: For canned sweet potatoes, use the kind with light syrup. Rinse and drain before mashing.
