Sweet Potato Muffins II

Perfect in Fall.
Very moist.



Ingredients
- ¾ c. canola oil (or 1/2 c. unsweetened applesauce with 1/4 c. oil)
- 1 c. white sugar
- 3 large eggs
- 1 t. vanilla
- 2 (15 oz.) canned sweet potatoes, mashed (see note below)
- 2 c. unbleached white all-purpose flour
- 1 t. baking soda
- ¼ t. baking powder
- ½ t. salt
- 2 t. cinnamon
- Raisins or walnuts, optional
Instructions
In a large bowl, combine flour, baking soda, baking powder, salt and cinnamon.
In a separate bowl, combine sugar, oil, eggs and vanilla with an electric hand mixer on low speed.
Add dry ingredients and continue to mix on low; add sweet potatoes and mix just until combined.
Fold in raisins or nuts, if desired.
Pour into greased muffin tins. Bake at 325 degrees for about 25-30 minutes.

NOTE: For canned sweet potatoes, use the kind with light syrup. Rinse and drain before mashing.
