Stuffed Mushrooms

Ingredients

  • 20 large mushrooms
  • 1/4 c. butter, melted
  • 6 slices center-cut bacon, crumbled (save drippings)
  • 1/2 c. breadcrumbs or stuffing mix
  • 1/4 c. chopped parsley
  • 1/4 c. chopped green onion (scallion)
  • 1/4 t. thyme
  • 4 oz. low-fat cream cheese
  • 1 c. shredded cheddar cheese
  • Parsley for garnish

Instructions

Remove stems from mushrooms. Brush mushroom caps with butter. Spray cookie sheet lightly with non-stick spray. Arrange mushrooms on cookie sheet.

Chop stems. Sauté mushroom stems, breadcrumbs, parsley, onion and thyme in bacon drippings. Beat cream cheese until smooth. Stir in cheddar cheese, bacon and mushroom mixture until blended.

Spoon mixture into caps. Broil 4 inches from heat 3-5 minutes.
