Strawberry Salad with Balsamic Vinaigrette

Made for Valentine's Dinner 2022
This easy salad recipe features a creamy homemade balsamic dressing and sweet ripe berries.
Ingredients
- 8 c. spinach or mixed salad greens
- 2 c. ripe strawberries, sliced
- 1/3 red onion, sliced thin
- 1/3 c. sliced walnuts, pecan pieces or almonds
- 1/3 c. low-fat feta cheese crumbles
- fresh ground black pepper
Balsamic Vinaigrette
- 2 Tbls. good aged balsamic vinegar (I use 25 yr. old)
- 2 Tbls. Dijon mustard
- 2 Tbls. maple syrup
- 1/4 t. kosher salt
- 6 Tbls. olive oil
Instructions
Wash and dry the salad greens.
Rinse strawberries and pat dry.
Thinly slice the red onion (to mellow the flavor, soak the onion slices in cold water for about 20 minutes prior to serving, then drain).
In a small saucepan over medium heat, toast the nuts for a few minutes until they are golden brown, stirring frequently and watching carefully so that they don’t burn. This is optional, but give better flavor.
Balsamic Vinaigrette: In a small bowl, whisk together the balsamic vinegar, Dijon mustard, maple syrup, and kosher salt. Then gradually whisk in the olive oil 1 tablespoon at a time until fully emulsified and creamy.
To serve, spread the greens on a plate and top with strawberries, red onion, almonds, feta cheese crumbles, drizzle with vinaigrette and several grinds of black pepper. Or mix all in a large salad bowl, your choice.
NOTE: Makes 8 salads. If you only want to make for 4 or 6, adjust recipe accordingly.
