Strawberry Popover Pancake

Love the strawberry chocolate combination. Pretty too!
Ingredients
- 2 Tbls. butter
- 1/2 c. unbleached all-purpose white flour
- 1/2 c. milk
- 2 eggs
- 1 pt. fresh strawberries (at room temperature)
- sugar to taste (approxiately1 Tbls.)
- whipped cream (from the can or homemade)
- 1/4 c. min semi-sweet chocolate chips
- whipped cream, optional
- breakfast syrup, optional
Instructions
Preheat oven to 200 degrees. Place butter in a 9” glass pie plate to melt. Remove from oven and set aside. Increase oven them to 400 degrees.
In a medium bowl, using a wire whisk, mix flour, milk and eggs until well blended. Pour mixture over melted butter; do not stir. Sprinkle chocolate chips evenly over top.
Bake at 400 degrees for 20-25 minutes, or until edges are puffed and deep golden. Remove from oven.
Sprinkle strawberries with a little sugar and spoon into center of pancake. Cut into wedges to serve and garnish with whipped cream and syrup if desired.
NOTE: Serves 4-6
