Strawberry - Pear Gelatin

Ingredients

  • large can of light pears
  • 6 oz. pkg. Strawberry Jell-O
  • 8 oz. pkg. low fat cream cheese, softened & cubed
  • 8 oz. cont. of light Cool Whip

Instructions

Drain pears; reserve juice. Cut up pears into bite-size pieces and set aside.

Add water to the pear juice to measure 3 cups. Bring to a boil. Transfer to a large bowl. Add Jell-O until dissolved. Whisk in cream cheese cubes until smooth. Refrigerate until slightly thickened.

Whisk in Cool Whip. Fold in pears.

Transfer to a glass 9x13-inch dish and refrigerate to set completely. Cut into squares to serve.
