Spring Greens with Berries & Orange Vinaigrette
Ingredients
- 10 oz. spring mix salad greens
- 11 oz. can mandarin oranges, drained
- 3/4 c. sliced fresh strawberries
- 3/4 c. fresh raspberries
- 1/2 c. slivered almonds, toasted
Dressing
- 1/4 c. canola oil
- 1 Tbls. red wine vinegar
- 1 Tbls. fresh orange juice
- 1 Tbls. honey
- 1 t. grated orange peel
- 1 t. Dijon mustard
- 1/4 t. salt
- 1/8 t. pepper
Instructions
In a large bowl combine the greens, oranges, berries and almonds.
Combine the dressing ingredients and mix in a mini food processor or use an emulsifier to blend well.
Drizzle dressing over salad, and toss to coat.
