Spinach: with Bacon Sweet Sour Dressing

Ingredients

  • Fresh baby spinach for 6-8 people (remove stems)
  • 10 slices center-cut bacon, fried crisp and crumbled (save 2 tablespoons of fat)
  • fresh mushrooms, sliced
  • red onion, diced or sliced thin

Dressing

  • 1/2 c. red wine vinegar
  • 1/2 c. white sugar

Instructions

Cook sugar and red wine until warm; add bacon and drippings.

Pour over fresh spinach or leaf lettuce leaves.

Refrigerate leftovers to use another time.

Add fresh sliced mushrooms and/or diced red onion, if desired.
