Spinach White Bean & Bacon Salad with Warm Maple Mustard Dressing

This dressing is amazing and perfect on this salad
Ingredients
- 2 (7-oz.) packages fresh baby spinach
- 1 (15.5-oz) can Great Northern beans, rinsed and drained
- 1/2 c. thinly sliced green onions
- 1/2 c. finely chopped red bell pepper
- 6 center-cut bacon slices, cooked and crumbled
Dressing
- 1/4 c. maple syrup
- 3 Tbls. cider vinegar
- 1 Tbls. extra virgin olive oil
- 1 Tbls. Dijon mustard
- 1/4 t. salt
- 1/4 t. freshly ground black pepper
Instructions
Combine the dressing ingredients in a small microwave-safe bowl, stirring with a whisk; microwave at HIGH 1 minute or until hot or heat in a small sauce pan just until blended and a little syrupy.
Place beans in a 2-cup glass measure; microwave at HIGH 1 minute or until hot. (warming is optional)
Combine onions, bell pepper, bacon, and spinach in a large bowl. Add syrup mixture and beans; toss well to combine.
Serve immediately.
NOTE: Serves 8, however if you are only serving 2-4 people, downsize the dressing ingredients accordingly or refrigerate leftover dressing and warm before assembling additional salad(s). Refrigerate leftover beans, onions, red pepper and bacon as well until you are ready assemble another salad(s).
