Spinach: Sweet Spinach Salad

This salad is amazing. Love the salad dressing

Ingredients

  • 1 pkg. fresh baby spinach (serves 6)
  • 15 oz. can mandarin oranges drained
  • 1/2 c. sliced or slivered almonds, toasted
  • sliced mushrooms, optional
  • crumbled bacon pieces, optional

Dressing

  • 3 Tbls. orange juice concentrate (see note below)
  • 2 Tbls. white sugar
  • 2 Tbls. apple cider vinegar
  • 1-1/2 t. chopped onion
  • 1/4 t. salt
  • 1/2 c. canola oil
  • 1 t. poppy seeds

Instructions

In a blender or small food processor, combine the orange juice concentrate, sugar, vinegar, onion and salt. While processing, gradually add oil in a steady stream (if using a food processor, add the oil last and pulse just to combine). Stir in poppy seeds. Transfer to a small container.

Refrigerate dressing for at least 1 hour or so until chilled.

When ready to serve, toss spinach, oranges and almonds. Add mushrooms and bacon if using. Drizzle with dressing to desired consistency.

NOTE: If you don’t have orange concentrate, you can substitute the juice of an orange and add a little zest.
