Spinach: Strawberry-Kiwi Spinach Salad

Ingredients

  • 6 cups fresh baby spinach
  • 1 pint fresh strawberries, halved
  • 2 kiwifruit, peeled and sliced
  • 2 Tbls. sunflower kernels, salted

Dressing

  • 1/8 c. canola oil
  • 3 Tbls. white sugar
  • 1/8 c. raspberry vinegar
  • 1/8 t. paprika
  • 1/8 t. Worcestershire sauce
  • 1/2 Tbls. poppy seeds
  • 1-2 green onions, sliced

Instructions

In a large salad bowl, combine the spinach, strawberries and kiwi.

In a blender or food processor, combine the sugar, oil, vinegar, paprika and Worcestershire sauce; cover and process for 30 seconds. Add onions and poppy seeds.

Pour over salad, add sunflower kernels and toss to coat.

Serve immediately.

NOTE: Serves 6-8. Dressing can be made ahead of time.
