Spinach: Cranberry Spinach Salad #2
Ingredients
- 8 c. fresh baby spinach
- 1 c. dried cranberries
- 2 medium pears, cored and chopped
- 2 Tbls. chopped pecans, toasted
Dressing
- 1/4 c. apple cider vinegar
- 5 Tbls. white sugar
- 1 t. dried minced onion
- 1/2 t. Worcestershire sauce
- 1/4 t. paprika
- 1/2 t. ground mustard (dry)
- 1/4 c. olive oil
- 1 Tbls. sesame seeds
- 1 t. poppy seeds
Instructions
In a large bowl, combine the spinach, cranberries and pears.
Dressing: In a blender or mini food processor, combine the vinegar, sugar, onion, Worcestershire sauce, mustard and paprika; cover and process until blended. While processing, gradually add oil in a steady stream. Add sesame seeds and poppy seeds.
Pour over salad and toss to coat.
Sprinkle with pecans.
NOTE: Makes 4-6 salads
