Spinach Bread

Ingredients

  • 1 loaf frozen white bread dough (Rhodes), thawed
  • 1 (10 oz.) pkg. frozen spinach, thawed & chopped
  • 2 eggs, beaten
  • 3/4 c. grated parmesan cheese
  • 1-1/2 t. minced onion
  • 1-1/2 c. Mozzarella cheese, shredded
  • 1/2 t. garlic powder
  • 1-1/2 Tbls. olive oil

Instructions

Thaw bread dough in refrigerator overnight. When ready to assemble, take out of refrigerator and let stand to room temperature (at least 30 minutes). If dough is cold it will be hard to work with.

Preheat oven to 350 degrees. Beat the eggs, stir in the minced onion, garlic powder and olive oil. Squeeze the thawed spinach (tip: use a ricer) to remove excess moisture. Stir into the mixture; then stir in the parmesan and mozzarella cheeses.

On a lightly floured surface, roll out the bread dough into a large oblong shape (roughly 12 x 14") about a 1/2-inch thick. Spread the spinach mixture evenly on top of the bread dough. Roll up jellyroll style. Pinch the ends and secure seam with toothpicks. Let rise about 1 hour. Brush on some of the beaten egg.

Bake on a greased baking sheet for 30-40 minutes. Slice and serve hot.
