Spinach: Apple Pecan Feta Spinach Salad

Ingredients

  • 10 oz. pkg. baby spinach, stems removed
  • 2 medium gala apples, cored and thinly sliced
  • 1 c. pecan pieces, toasted
  • ½ c. dried cranberries
  • 6 oz. center cut bacon, cooked and crumbled
  • 2 Tbls. red onion, chopped or sliced into thin strips

Dressing

  • ¼ c. olive oil
  • 1/8 c. apple cider vinegar
  • 1 Tbls. pure maple syrup
  • 1 t. Dijon mustard
  • 1/8 t. salt
  • 1/8 t. pepper

Instructions

Dressing: Add all ingredients to a small mason jar; cover with lid and shake to blend well. Or just blend well in a bowl using a whisk, or use a mini food processor.

In a large salad bowl, toss together spinach, apples, pecans, feta, cranberries, bacon and red onion.

Drizzle desired amount of dressing over salad and toss to evenly coat. Serve immediately.
