Wrap: Spicey Cranberry Turkey

Ingredients

  • 2 to 2-1/2 c. cooked turkey breast, shredded
  • 4-6 oz. soft goat cheese or low-fat cream cheese
  • 1 small granny smith apple, thinly sliced into strips
  • 2 Tbls. fresh cilantro
  • lettuce
  • 6 soft whole wheat tortillas

Cranberry Sauce

  • 1/2 c. orange juice
  • 1/2 c. white sugar
  • 6 oz. fresh or frozen cranberries (1/2 bag)
  • 1/4 c. raisins
  • 1/4 c. diced onions (I used scallion)
  • 1/8 c. red wine vinegar
  • 1/2 Tbls. diced jalapeno pepper
  • 1/2 t. minced garlic
  • 1/4 - 1/2 t. cumin

Instructions

Mix cranberry sauce ingredients in a sauce pan. Boil 15 minutes until cranberries burst and sauce is thickened; refrigerate until ready to assemble the wraps.

Spread 2 tablespoons of soft cheese on tortilla.

Layer lettuce, about 1/2 cup turkey, 1/4 cup cranberry sauce, 1/2 t. cilantro and several thin apple strips. Salt and pepper to taste. Roll up.
