Shared with me by: Cami G (friend)

Quick and easy to make and has a ton of flavor!

Ingredients

  • 1 Tbls. olive or canola oil
  • 14 oz. smoked sausage, sliced (I used Hillshire low-fat)
  • 4 carrots, sliced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • ¾ t. cumin
  • 16 oz. dried lentils, rinsed
  • 15 oz. can black beans, rinsed and drained
  • 2/3 c. pearl barley
  • ½ c. frozen corn
  • 28 oz. can crushed tomatoes
  • 10 c. (80 oz.) chicken broth (Kitchen Basics)

Instructions

In a large soup pot, heat olive oil. Add sausage slices and brown. Remove sausage from pot.

Add carrots and onion; cook for 6-8 minutes or until tender.

Add garlic and cumin; cook 1 minute longer.

Return sausage to the pot along with remaining ingredients; bring to a boil. Reduce heat, simmer covered for 35-45 minutes or until lentils and barley are tender, stirring occasionally.
