Southwest Barley & Lentil Soup

Quick and easy to make and has a ton of flavor!
Ingredients
- 1 Tbls. olive or canola oil
- 14 oz. smoked sausage, sliced (I used Hillshire low-fat)
- 4 carrots, sliced
- 1 onion, diced
- 2 garlic cloves, minced
- ¾ t. cumin
- 16 oz. dried lentils, rinsed
- 15 oz. can black beans, rinsed and drained
- 2/3 c. pearl barley
- ½ c. frozen corn
- 28 oz. can crushed tomatoes
- 10 c. (80 oz.) chicken broth (Kitchen Basics)
Instructions
In a large soup pot, heat olive oil. Add sausage slices and brown. Remove sausage from pot.
Add carrots and onion; cook for 6-8 minutes or until tender.
Add garlic and cumin; cook 1 minute longer.
Return sausage to the pot along with remaining ingredients; bring to a boil. Reduce heat, simmer covered for 35-45 minutes or until lentils and barley are tender, stirring occasionally.
