Smoked Turkey & Apple Salad

This salad features a unique combo of ingredients and a Dijon dressing.
Any variety of apple works, but I like Galas.
Ingredients
- 6-8 c. watercress greens (see Note)
- 1 medium carrot, julienned
- 10 cherry tomatoes
- 8 oz. smoked turkey, julienned (from Deli)
- 2 medium apples, sliced thin (your favorite)
- 1/3 c. chopped walnuts, toasted.
Dijon Dressing
- 5 Tbls. olive oil
- 2 Tbls. apple cider vinegar
- 1 Tbls. Dijon mustard
- 1 t. lemon-pepper seasoning
- ½ t. salt, optional
Instructions
In a small bowl, or jar with tight fitting lid, whisk or shake dressing ingredients until well blended.
Place watercress on a platter or divide among individual plates. Top with carrot, tomatoes, turkey and apples. Drizzle with dressing; sprinkle with walnuts and serve.
NOTE: Makes 6-8 servings
Romaine or leaf lettuce can be used instead of watercress, or try a combination of greens.
