Sliders: Guinness Beef

Ingredients
- 1 pkg. Kings Hawaiian rolls
- ¾ lb. sliced roast beef (from deli)
- 6 slices Swiss cheese, cut in half
- 1 Tbls. butter
- 8 oz. sliced mushrooms
- ½ vadalia onion, sliced (sweet)
- ¼ c. Guinness
Glaze
- 1 bottle of Guinness beer
- 1 stick of butter
- ¼ c. brown sugar
- 1 Tbls. dried mustard
- 1 t. onion powder
- 2 cloves garlic, minced
Instructions
In a medium skillet, melt 1 tablespoon butter over medium heat. Add mushrooms, onions and ¼ c. Guinness beer; sauté until liquid is absorbed.
Prepare glaze by combining all ingredients in a medium saucepan. Bring mixture to a boil, then lower heat slightly and cook until thickened. Mixture should be reduced by at least half (when in doubt, reduce a little more). Set aside.
Assemble sandwiches by slicing rolls in half. Place bottoms of the rolls in a lightly greased 9 x 13 pan; use a little butter or margarine. Top each roll bottom with roast beef, mushroom and onion mixture, then Swiss cheese. Place tops of rolls on cheese and press down.
Pour glaze evenly over sandwiches.
Bake uncovered for 30 minutes at 350 degrees. If using a glass pan, lower oven temp to 325 degrees.
Serve with pickles on the side, if desired
NOTE: You can pre-assemble sandwiches ahead of time, cover with plastic wrap and refrigerate until you want to bake. You can also pre-make glaze and refrigerate until needed, just heat up in a small saucepan.
