Shrimp: Sheet Pan Shrimp Boil

Wow, great flavor and so easy and quick!

Ingredients

  • 1 lb. baby Dutch yellow potatoes (or small Golds, quartered)
  • 3 ears corn, each cut crosswise into 4 pieces
  • ΒΌ c. unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 Tbls. Old Bay Seasoning
  • 1 lb. uncooked medium shrimp, peeled and deveined (CenSea)
  • 1 pkg. smoked andouille sausage (or chicken andouille), sliced thin
  • 1 lemon, cut into wedges
  • 2 Tbls. chopped fresh parsley, garnish

Instructions

In a large pot of boiling salted water, cook potatoes until just tender and parboiled (about 10-15 minutes). Stir in corn during the last 5 minutes of cooking time; drain well.

Rinse shrimp in cold water and pat dry.

Preheat oven to 400 degrees. Lightly oil a large baking sheet with olive oil or nonstick olive oil cooking spray.

In a small sauce pan, melt butter. Stir in garlic and Old Bay seasoning; set aside.

Place potatoes, corn, shrimp and sausage in a single layer onto the prepared baking sheet. Stir in butter mixture and gently toss to combine. Lightly salt and pepper, if desired.

Place baking sheet in oven and bake for 15-20 minutes, or until the shrimp are opaque and corn is tender. Garnish with parsley if desired.

Serve immediately with lemon wedges.
