Shrimp: Lime Shrimp & Avocado Salad
Ingredients
- 1 lb. large or jumbo cooked shrimp, peeled and deveined, chopped
- 1 medium tomato, diced
- 1 avocado, diced
- 1 jalapeno, seeds removed and diced fine
- 1/4 c. red onion, chopped fine
- juice of 2 limes
- 1 t. olive oil
- salt and coarse pepper to taste
- 1 Tbls. fresh cilantro, chopped
- broken romaine lettuce (for each serving)
Instructions
In a small bowl, combine red onion, lime juice, olive oil, pinch of salt and pepper. Let stand for at least 5 minutes to mellow the flavor of the onion.
In a large bowl, combine chopped shrimp, avocado, tomato and jalapeno.
Combine all the ingredients together; add cilantro and gently toss. Adjust salt and pepper to taste.
Serve as is or on top of broken romaine pieces.
NOTE: You can also use medium sized shrimp; no need to cut up
