Sheet Pan: Healthy Turkey Sausage & Veggies
You can use any type of smoked sausage (chicken, beef, pork) or Italian Sausage, if desired
Ingredients
- 2 c. red potato, diced small
- ¾ lb. green beans, trimmed and halved
- lg. head of broccoli (1-1/2 c.) florets cut in large pieces
- 2 large bell peppers (any colors), cut into thick squares
- medium onion, sliced
- 13 oz. smoked turkey sausage, coin into thick slices
- freshly grated Parmesan cheese
- brown rice, for serving (optional)
Seasoning
- ¼ t. red pepper flakes, optional
- 1 t. paprika
- ½ t garlic powder
- 1 Tbls. dried oregano
- 1 Tbls. dried parsley
- ¼ t. salt
- ¼ t. pepper
Instructions
Preheat oven to 400 degrees. Line a large sheet pan with foil or parchment paper.
Combine all the seasonings in a small bowl and set aside.
Prep the veggies and sausage slices and put in a large bowl.
Pour the olive oil over the veggies and sausage coins. Sprinkle the seasonings over all. Using a large spoon, toss to evenly coat. Transfer to prepared sheet pan.
Bake in oven for 15 minutes. Remove from the oven and flip/stir all the veggies and sausage coins around. Return to oven and bake for another 10 to 15 minutes or until veggies are crisp tender and sausage is browned.
Sprinkle freshly grated parmesan cheese over the veggies and sausages as soon as they come out of the oven.
Serve over rice, if desired.
