Sesame Snow Pea and Asparagus Rice

Phase 1

Ingredients

  • 1/4 lb. fresh snow peas, trimmed and cooked
  • 1/4 lb. fresh asparagus, cut into 1-inch pieces
  • 3/4 c. cooked brown or white rice
  • 1 Tbls. canola oil
  • 1 t. sesame oil
  • 1-1/2 t. Kikkoman low-sodium soy sauce
  • 3 green onions, chopped
  • 1/8 t. crushed red pepper flakes

Instructions

Steam or cook snow peas and asparagus in the microwave for 2-3 minutes, just until tender-crisp.

In a large serving bowl, toss the rice with the canola oil, sesame oil and soy sauce. Stir in the snow peas, asparagus and sesame seeds and toss to combine.

Sprinkle with green onions and red-pepper flakes.

NOTE: Serves 3-4
