Scored Potatoes

Ingredients

  • 4 large baking potatoes (russets, Idaho or large yukon golds)
  • 4 Tbls. butter, melted
  • 1/2 t. garlic powder or 1/4 t. garlic salt
  • 1/8 t. paprika
  • 1 Tbls. minced fresh parsley
  • salt & pepper to taste
  • low-fat sour cream, optional

Instructions

With a sharp knife, cut potatoes in half lengthwise. Slice each half into slices, but not all the way through and fan potatoes slightly. Place in a shallow baking dish.

Melt butter with garlic, parsley, paprika, salt and pepper. Brush mixture over potatoes.

Bake uncovered at 375 degrees for 1 hour or until tender.

Serve with sour cream if desired.

NOTE: You can also slice them whole, if preferred.
