Salmon: with Captain Jack's Salmon Rub

Ingredients

  • 1-1/2 lbs. Atlantic Salmon, skin removed
  • 1 Tbls. kosher salt
  • 1-1/2 Tbls. brown sugar
  • 1 Tbls. dried parsley
  • 1-1/2 t. garlic powder
  • 1-1/2 t. paprika
  • 1-1/2 t. freshly ground pepper
  • 1-1/2 t. dried dill
  • ½ t. coriander
  • ½ t. ground cumin

Instructions

In a small bowl, mix all ingredients together with a fork.

Oven Method: Preheat oven to 400 degrees.

Place salmon in a baking dish. Lightly brush salmon with a little olive oil. Season on both sides with desired amount of rub.

Place dish on middle rack and bake for 15 minutes until salmon is opaque in color and easily flakes with a fork or internal temperature reaches 145 degrees at the thickest part.

To Grill: Preheat grill to medium high.

Lightly brush salmon with a little olive oil. Season on both sides with desired amount of rub.

Place seasoned salmon on a pre-soaked cedar plank. Cook approximately 15 minutes until salmon is opaque in color and easily flakes with a fork or internal temperature reaches 145 degrees at the thickest part.
