Salmon: Oriental Marinade (Grill or Broil)

Ingredients
- 4 (4-5 oz.) wild Alaskan sockeye salmon filets
- 1/4 c. peanut or canola oil
- 2 Tbls. reduce sodium Kikkoman soy sauce
- 2 Tbls. good balsamic vinegar (18 yr or older)
- 2 Tbls. chopped green onion
- 1-1/2 t. brown sugar
- 1 clove garlic, minced
- 3/4 t. ground ginger
- 1/2 t. dried red pepper flakes
- 1 t. sesame oil
- salt
- pepper
Instructions
Combine peanut oil, soy sauce, vinegar, green onion, brown sugar, garlic, ginger, red pepper flakes and sesame oil.
Rinse filets and pat dry with paper towel.
Place fish in shallow bowl or zip lock bag, and pour marinade over fish. Cover and refrigerate 4-6 hours.
Grill Method: Lay a sheet of aluminum foil on grill rack. Rack should be about 5 inches above coals. Remove fish from marinade and place on foil. Cook about 10 minutes total; turn once to brown each side.
Broil Method: Line a small shallow baking pan with foil. Place fish on foil and broil in oven, 5 inches from the broiler coil, for about 10-12 minutes.
Fish skin should stick to foil and fish will just peel away from skin. Be sure to remove the brown stuff between the fish and the skin to avoid a fishy taste.
