Salmon: Grilled with Lemon & Dill

The best salmon recipe you will ever try
Ingredients
- one 1-1/2 lb. wild Alaskan sockeye salmon fillet
- 1-2 Tbls. fresh snipped dill or 1 t. dill weed
- 1/2 t. lemon-pepper seasoning
- 1/2 t. salt
- 1/4 t. garlic powder
- 1/4 c. packed brown sugar
- 3 Tbls. chicken broth
- 3 Tbls. canola oil
- 3 Tbls. reduced sodium Kikkoman soy sauce
- 3 Tbls. finely chopped green scallion onions
- 1 med. onion, thinly sliced into rings
- 1 small lemon, thinly sliced
Instructions
Rinse salmon and pat dry with paper towel.
Combine dill, lemon-pepper, salt and garlic powder. Set aside.
Place salmon in a shallow glass baking dish skin side up.
Combine the brown sugar, broth, oil, soy sauce and green onions. Pour marinade over the salmon. Cover and refrigerate for 30 minutes.
Turn fish over, sprinkle dry rub on top of salmon and press into fish using the back of a spoon.
Lay onion and lemon slices on top of salmon; spoon marinade over salmon coating the lemon and onion. Cover and return to refrigerator to marinade another 30 minutes. Drain and discard marinade.
Place salmon skin side down on foil and grill over medium heat; cook for about 15-20 minutes or until fish flakes easily with a fork.
NOTE: I like to use Orka Bay Wild Alaskan Sockeye found at Woodman's. Three pieces to a package.
