Salmon: Baked with Parmesan Herbed Crust

Simple and Easy

Ingredients

  • 1 Alaskan sockeye salmon filet, about 2 lbs. (whole or cut in pieces) – See Note below
  • 3 garlic cloves, finely minced
  • ¼ c. chopped fresh parsley
  • 1/3 c. shredded parmesan cheese
  • salt and pepper to taste

Instructions

Preheat oven to 425 degrees. Line a shallow baking dish (do not use glass) with aluminum foil.

In a small dish, mix parmesan cheese, parsley and garlic powder or cloves; set aside.

Place salmon, skin side down, onto lined baking sheet. Cover salmon with piece of parchment paper. Bake for 10 minutes. Remove from oven and remove parchment paper.

Top salmon with parmesan mixture. Adjust oven to broil and return to oven, uncovered and broil for about 5. The parmesan cheese should be melted and lightly browned. Allow to rest 5 minutes before serving.

NOTE: Rinse salmon in cold water and pat dry. Place in a ziplock bag or baking dish, add a little milk and soak for 30-45 minutes. Rinse in cold water, pat dry and place in prepared baking dish. This eliminates the fishy smell some fish have.
