Rhubarb Muffins
Ingredients
- 1/2 c. canola oil
- 1 egg
- 1-1/4 c. packed brown sugar
- 1 c. low-fat buttermilk
- 2 t. vanilla
- 2-1/2 c. all-purpose unbleached white flour
- 1 t. baking powder
- 1/2 t. salt
- 1 t. baking soda
- 1 t. cinnamon
- 2 c. finely cut rhubarb
- 1/2 c. chopped walnuts
Instructions
Mix oil, egg, brown sugar, buttermilk and vanilla.
Add dry ingredients. Fold in rhubarb and walnuts.
Spoon batter evenly into greased or paper lined muffin cups until 2/3 full.
Bake at 350 degrees for 20-25 minutes. Remove to wire rack.
